Cinco de Mayo is right around the corner, so get ready to burst out your best Tequilla and your spiciest salsa. For those who don’t know, Cinco de Mayo is a minor Mexican holiday that commemorates the victoria de battila del pueblo, or the Battle at Pueblo, which was a win in 1862 against the French during the Franco-Mexican Wars. In honor of this amazingly festive minor holiday, I present to my fellow Greenwich Girls, your full-proof -make-at-home Cinco de Mayo menu that’s guaranteed to make your party “el mejor del mejor.”

This simple recipe uses store-bought phyllo dough, salsa, and (even better) you can use any choice of filling that you want. Pictured here is ground beef, but feel free to sub with ground turkey, ground chicken, or even those browned veggie scramble bits that look and taste the same, but with significantly less fat. After all, we still have to look out for our waistlines. Brace yourselves…bikini season is upon us. *insert game of thrones theme song*
A Mexican spin on the waspy dinner party classic, this recipe utilizes any leftover shrimp that you may have, any leftover avocado from salads or breakfast toasts, or the like and turn it into this stunning appetizing wonder. Cooling, spicy, flavorful, and eyecatching, This will be one of the items that will never be forgotten, along with your epically festive shindig.
