Apparently we have a sourdough club now, and if you live anywhere near Stamford, you should probably know about it before the next drop closes.
Bite Club is a Stamford-based micro-bakery making small-batch sourdough — but this isn't just another beautiful country loaf wrapped in brown paper.
There are bagels, focaccia, cookies, seasonal specials, and the item that got my attention immediately: sourdough donuts. (Quick note on how it works: menus and preorders go up on Instagram at @biteclubct, and pickup happens locally over the weekend — worth following now, because slots move fast.)

So if you're picturing casually deciding on Saturday morning that you'd like a loaf, you may already be too late.
The interesting part is how far Bite Club takes the sourdough concept. The loaves are naturally leavened, obviously, but so are the bagels, the focaccia, the cookies — and even the donuts are built around sourdough fermentation.
Per the bakery, everything is slow-fermented without commercial yeast, preservatives, additives, or seed oils, and made with unbleached, unenriched, unbromated flour. That's a fairly specific set of standards to hold across a menu this varied, and it's part of what makes the drop feel less like a bakery case and more like a project worth checking in on each week.
The menu also keeps changing. There's no giant pastry case with the same twenty things behind glass every Saturday — instead, Bite Club releases in small batches and rotates items as new recipes are developed. One week might bring bread, bagels, focaccia, and cookies; another might bring a seasonal special or a limited-release donut.
The model is part bakery, part drop culture: you find out what's coming, order before everyone else does, and pick up over the weekend.
Bite Club has also started popping up around Fairfield County with special items, which is where the sourdough donuts have been making appearances.
About those donuts — I haven't tried one yet, but I intend to, purely for editorial purposes, and I'll report back on how they actually taste once I have.
Sourdough donuts sit right at the intersection of the current fermentation obsession and the fact that nobody actually wants wellness culture to take away her donut. Judging by how quickly Bite Club's releases have been disappearing, I'm apparently not the only person curious.
